Asparagus with Balsamic Tomatoes
Ingredients
1 lb asparagus, trimmed
2 tbsp Basil EVOO
1 1/2 cup halved grape tomatoes
1 tsp minced garlic
2 tbsp Black Currant Balsamic
1/4 tsp sea salt
1/4 c crumbled goat cheese
1/2 tsp black pepper
Directions
Sauté asparagus in EVOO for 5 minutes. Add tomatoes and garlic, cook 5 minutes.
Stir in Balsamic, cook 3 minutes. Add salt.
Arrange asparagus on platter, top with tomato mixture,
sprinkle with cheese and pepper.
