Roasted Cabbage Wedges

Roasted Cabbage WedgesIngredients
1 Tbsp + 2 more Tbsp UP EVOO
1 medium head green cabbage, cut into 1 inch thick rounds
Coarse salt and ground pepper
1 tsp caraway or fennel seeds

Preheat oven to 400 degrees.
Brush a rimmed baking sheet with 1 Tbsp EVOO.
Place cabbage rounds in a single layer in sheet and brush with 2 Tbsp oil.
Season with salt, pepper, and caraway or fennel seeds.
Roast until cabbage is tender and edges are golden, about 40-45 minutes.
